Suji Thekua, Thekua without mould, Bihari Thekua Recipe, Khajuria,thekua main ingredients,Ingredients:Semolina - 1.5 cups (250 gms)Refined flour - 1.5 cups (180 gms)Powdered Sugar - less than 1 cup (125 gms)Dry Coconut - ¼ cup (grated)Dry coconut - ¼ cup (finely grated)Full cream milk - 1 cup (use more than ¼ cup)Ghee - ½ cup (60 gms)Fennel seeds - 1 tspRaisins - 1 tbspGreen Cardamoms powder - ½ tspHow to make suji thekua1- Take 1.5 cups of semolina, add 1.5 cups of refined flour, less than 1 cup of powdered sugar, ½ tsp of green cardamoms powder, ½ tsp of fennel seeds, 1 tbsp of chopped raisins, ¼ cup of grated dry coconut, ¼ cup of finely chopped dry coconut, ¼ cup of ghee for the dough.2- Mix all the Ingredients Properly and knead the stiff dough using ¼ cup of lukewarm full cream milk. 3- Mash the dough between your palms to bind it. 4- Take a dough lump and bind it between your palms.5- Roll it between your palms and use the mould of thekua to give it a shape.6- Place it on the round mould and press by keeping it on the table top.7- Roll a dough lump vertically and place it on the longer mould.8- Again, press it by keeping it on the table top.9- If you don’t have the mould then, take a dough lump, roll it, press it and poke it using a fork. To fry thekua1- Preheat oil in the wok2- Moderately heated oil and the medium flame is required to fry thekuas. 3- Add them in the wok to fry and flip them once they are golden from the bottom.4- Drain them out once they have fried. 5- It takes 4-5 minutes to fry single round of thekuas.Serving:1- Store them in an airtight container and consume for 2 months.
